Ingredients

– 4 cups vegetable or chicken broth
– 2 cups fresh Ground Elder leaves, washed and chopped
  (or 2–4 tbsp Ground Elder powder)
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 2 medium potatoes, peeled and cubed
– ½ cup heavy cream (optional, for richness)
Salt and pepper to taste
– Fresh herbs (like parsley or chives) for garnish
– A touch of olive oil for sautéing

The Making

  1. In a pot, warm a splash of olive oil over medium heat.

  2. Sauté chopped onion and garlic until softened and fragrant.

  3. Add cubed potatoes and broth. Bring to a boil, then simmer until potatoes are tender.

  4. Stir in the chopped Ground Elder leaves (or powder). Simmer for another 5–10 minutes.

  5. Blend the soup with an immersion blender (or in batches in a standard blender) until smooth.

  6. If using, stir in cream for added depth.

  7. Season with salt and pepper to taste.

  8. Garnish with fresh herbs before serving.
